An Evening with Chef Josh Valentine and Corey Bauer

Join us for the start of our Summer Chef Series for an intimate indoor dining experience sure to please the palette. Our series kicks off with Chef Josh Valentine and Wine Connoisseur Corey Bauer who will walk us through an evening of Summer favorites with the option of an added wine pairing for each course.
After dinner, participants are invited to head down to the Carlton Landing Boat Club and enjoy a group evening boat cruise on Lake Eufaula.
- Shrimp & risotto cakes with a tomato vinaigrette
- Cornbread panzanella with heirloom tomatoes and goat cheese
- Grilled tenderloin of beef with spinach and blue cheese tortellini and roasted mushroom
- Turtle Cheesecake
Born and raised in Oklahoma City, Joshua discovered his passion for food from reading cookbooks in high school. His culinary career began in a Mexican restaurant at age 19, where he worked various positions to garner a firm understanding of the inner workings of the restaurant industry. After realizing his passion for the culinary arts, Joshua attended culinary school and went on to gain experience at a variety of restaurants, including Restaurant Alma in Minneapolis and Local in Dallas. Joshua continued his culinary career in Dallas where he joined Stephan Pyles and Samar by Stephan Pyles as Line Cook and Sous Chef. His talents led him back to Oklahoma where he became the Chef de Cuisine at The Coach House restaurant and, most recently, General Manager and Executive Chef at Divine Swine.
Corey Bauer is a part of Thirst Wine Merchants, an Oklahoma-based distributor of fine wines from around the world.
